Cynara humilis, called wild thistle, is a species of flowering plant in the artichoke and cardoon genus Cynara native to the Canary Islands, Morocco, Algeria, Portugal, and Spain.[2] It is used locally as a coagulant in artisanal sheep and goat cheesemaking.[3]

Cynara humilis, comúnmente llamada alcachofilla, cardo borriquero o cardocuco, es una especie de gran cardo de la familia Asteraceae, endémica del sur de España, centro de Asia, noroeste de África. Cosmopolita en todo el mundo, siendo en Australia una fuerte especie invasora. Crece muy bien, preferiblemente en áreas abiertas hasta los 1000 msnm.
